It’s Been A Weekend: Holiday Edition

Well hello.

What a weekend.

We started it off with Christmas Eve where I took a morning 2 hour yoga class. Mind you I had had a huge burger & 2 glasses of red wine the night before so it was a very bloated yoga class. After class I headed over to my Godparent’s to bake three PUMPKIN ROLLS.

This is by far my most favorite holiday recipe ( highly recommend serving this gem for New Year’s Eve too if you haven’t tried it ). Since a lot of you asked via Snapchat, I feel like I should share the recipe? Here ya go:

Libby’s Pumpkin Roll

Delicious and easy to make.

Prep: 45 min – Cook: 15 min – Cool: 60 min

CAKE:
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup LIBBY’S 100% Pure Pumpkin
1 cup walnuts (optional), chopped

FILLING:
1 pkg. (8 oz.) cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter or margarine (we recommend LAND O LAKES® Butter), softened
1 teaspoon vanilla extract
1/4 cup powdered sugar ( optional )

FOR CAKE:
PREHEAT oven to 375°F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:

BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

Makes 10 servings

Note: Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

Sure it looks difficult ( & it is ) but once the pumpkin, cream cheese medley hits your lips you will forget any of the work. TRUST ME. It’s that good.

In other news my entire family did Secret Santa. Which I feel is very efficient because then you can spend all your holiday money on one person & they can get something SPECTACULAR! I got my stepmom, Julie. For her gift I filled a box with tons of beauty products & then on top I laid a bottle of white wine and a gift card to my favorite facialist.

Come to find out my sister, Mimi, rigged the entire Secret Santa. How evil right! LOL. She basically set up everyone. She rigged Michael to have me too. Anyway, Mimi was dying to get my dad a dog. SO she put herself with my dad. I told her to stop being so diabiolical. HAHA.

Instead of just having her buy the dog we kind of all pitched in & surprised him. HE WENT WILD. My dad lost his lab recently so this gift was extra special. 2016 was especially hard too because we lost his mother, my grandma. His new puppy represents life & love. Obviously we’re all out of our mind with excitement.

Shifting gears, I have not taken off this pink off the shoulder sweater ( I got a large; I like it oversized ! ). Isn’t it the ideal holiday sweater? It’s kind of a blush pink but paired with my FAVORITE EVER black jeans & some pearl earrings it looks holiday-ish. Also wearing a matching bag by Ms. Marianna Hewitt ( how cute is her latest handbag collection? ). Anyway, I paired this with a suede black pump & I was ready to hit the ground running, pumpkin rolls in hand.

  3. Absolutely love that sweater on you! So cute. I would love to know if you have a favorite strapless bra? Or what you normally wear with an off-the-shoulder sweater/top like this! I have the hardest time finding comfortable strapless that don’t fall down 🙂
