I’m about to get all seasonal on ya: THREE.Ingredient.Skinny.Pumpkin.Pie.
Oh, & NBD it’s like, um…about 100 calories. Plus it tastes pretty damn close to Suzy Fn-ing Homemaker’s Thanksgiving pumpkin pie.
I mean, really- you can’t even taste the difference.
But first things first: remember when I did this post on two ingredient lemon crumble? Well this is similar— same brand Cocoroons ( gluten free, raw, & dairy free ) but it’s pumpkin.
Because who doesn’t love pumpkin-everything?
Anyway, here’s the ingreds:
+ 2 ‘Vanilla Maple’ Cocoroons
+ 3 tablespoons of organic pumpkin puree ( in a BPA-free can )
+ A heaping tablespoon of chia seeds
+ Optional: I added ‘Pumpkin Pie Spice‘ from Trader Joe’s for an added touch
Directions: mash up two pumpkin ‘cookies’ & add chia seeds. Add the pumpkin puree on top & stir all ingredients together well. Heat up in the microwave ( << I typically HATE microwaves, but unfortunately that is the only option unless you own a broiler ) for a 30 seconds to a minute. Add a dash of ‘Pumpkin Pie Spice’ & enjoy in bed while watching trashy TV.
Thanksgiving tip: my friend, Erica, had the bright idea of taking the entire bag of Cocoroons + 1/2 a can of pumpkin & make a whole freaking pie instead of just a measly serving. Perf for the fam bam!

These look amaze. Just curious, why do you hate the microwave? I obvi know not to stand in front of it, but does it transmit radiation into your food or some other atrocity?

These cocoroons little healthy desserts are amazing!!! I love healthy sweets, but often find myself running out of creative new recipes love this so easy!!!
I don’t like microwaves either. You could try heating up the pumpkin puree in a small pan on the stove, and then mixing it into the rest of the ingredients. That could work as an alternative!

I make pumpkin pie just by popping open a can of pumpkin and dumping in some pumpkin pie spice and stevia! Works like a charm! Eating this deliciousness out of the can with a spoon is the preferred method of chowing down!

LOVE pumpkin everything!!! Such a good idea. Must try this.
My boyfriend and I actually don’t even own a microwave! haha. We’ve done just fine without one. The only time it gets hard is when we want to re-heat leftovers, but we just preheat the oven & pop it in for a few minutes. Takes longer, but def healthier.

My daughter is going to be stoked! She’s been asking for pumpkin pie for at least a month now (poor thing) but her father & I eat gluten-free so I keep teling her I’ll make one when I find a good gluten free pie crust (or recipe for one). We tried your lemon crumble recipe and it was a hit. I can’t wait to try this one too!
