The Skinny Confidential shares healthy recipes like cotton candy ice cream.Ok, so this is totally off topic but we can just talk about my spaghetti squash obsession?

I literally can’t get enough lately.

I’m seriously, like, going to turn into a walking squash. It’s turning into a creepy problem.

For some reason, I’m like a pregnant pickle lady lately. But I’m not pregnant & the pickle is spaghetti squash.

Speaking of obsessions, let’s talk about ice cream.

Not nasty-ass dairy filled ice cream. Clean ice cream…that’s so damn good it hurts.

Here’s what you’ll need:

Basically all you do is blend the above ingreds ( 1 1/2 banana, about 10 raspberries, 3 tablespoons of goji powder, 2 drops of vanilla, & a handful of ice ). After its blended add some coconut flakes on top & then get ready for a strobe light, techno party in your mouth.

Yesterday I was scrolling through my Instagram feed & died with excitement when I found this cotton candy ice cream via Loni Jane ( << my favorite Insty account, by far ). I literally hoped out of bed this AM & ran, skipped, did ‘the Jig’ to the nearest store. & lemme tell you, this hot pink recipe is going down as one of my favorites. It’s refreshing, delicious, & gets rid of any ice cream/sorbet craving. Plus there’s some badass benefits of goji berries: it aids in mental well-being/calmness, athletic performance, happiness, & enhances quality of sleep.

BTW: Dang coconut chips are just ridiculous. There’s three ingredients in them ( coconut, coconut sugar, & sea salt ) and they can be added to everything & anything…think: oatmeal, fruit bowls, smoothies, etc.

Ok, I’m off to eat a little more spaghetti squash & watch “The Following.”

  1. Wowza this sounds AMAZING! I just made super clean chocolate pudding using Agar Agar my latest obsession 🙂 I wrote a blog about it! Goji berries are VERY popular out here in SE Asia you can buy them for half nothing and I eat them everyday 🙂 Lots of Love C

  2. I’m not the biggest ice cream person, usually – it’s always so freaking sweet and tastes chemical-filled! Your version looks refreshing and delicious, though! Leave it up to TSC to re-invent ice cream. Love your healthy recipes! Great work on the re-design, too 🙂

  3. In love with spaghetti squash!!! What are some of the ways your preparing it? Always looking for some new ways to eat it! Thanks! Xo

  4. Ok, that cotton candy recipe looks to die for. And, I feel you on the spaghetti squash obsession!! I love love love it and most recently used it to replace my hashbrown obsession – I line my pan with a small amount of ghee and saute the squash … seriously. Just, yum.

  5. Pink – check! Coconut – check! Healthy – check! Adding this to our “to make” file immediately! Thanks for another great recipe girl! XO, D

  6. Along the clean ice cream theme…and a gift to you in exchange for your cotton candy flavor…switch out the goji powder for cacao…add a tablespoon of nut butter. If you want to go all crazy-like, cacao nibs on the top…

  7. Your pink blender! Ah! Die. Okay so I’ve been meaning to buy that goji powder, but every time I see it, I’m like…am I actually going to use that? But now, the answer is definitely yes. This recipe sounds divine. The portion control bowls make me laugh. I remember a friend of mine in middle school dishing ice cream into small little bowls one day, and she was like, “I use the little bowls for ice cream because I stuff them super high and it makes it seem like I get to eat a lot.” Haha!

  8. I swear coconut chips and vanilla extract make everything taste delicious! I will definitely be trying this magical goodness!
