[ Dark chocolate chips ]
I find baking extremely therapeutic. Its measurements are exact & girly and allows my creativity to flow. I am always trying to substitute ingredients to make my baking bites a bit healthier. This specific recipe was all organic and turned out to be a learning experiment too: steel cut oats are difficult to bake with [ they end up taking way too long to bake ], I would use rolled oats next time [ they’re quicker ].
I whipped up this batch on a whim, and it was a success [ other than those pesky steel cut oats ]. Each cookie, if you portion the cookies out mindfully, turns out to be about 80 calories [ that does not mean to eat the whole batch in one sitting!!! ]. My slightly chubby Chihuahua was the ultimate taste tester and approved with a tail wag and long, low cry that begged for another lick.

[ Fresh out of the oven, served with a glass of non-fat milk ]
Lauryn’s Wholesome Oatmeal Coconut Dark Chocolate Chip Cookies
** Makes about 30 cookies
1 cup oat, gluten-free flour
1/2 cup of Earth Balance Light
1 cup organic sugar
1/4 organic, light brown sugar
1/2 cup of unsweetened coconut
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups rolled oats
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup of DARK chocolate chips
1 teaspoon vanilla
1 tablespoons soy milk (unsweetened)
1/2 organic lemon
1 brown egg
3 egg whites
Preheat oven to 375 degrees. Mix up all dry ingredients [ besides oats, coconut & dark chocolate chips ]. Beat in unsweetened soymilk, eggs, Earth Balance light, lemon and vanilla. Add the oats, coconut & dark chocolate chips. Scoop with a spoon to make 1 inch by 1 inch rolled balls of dough. They should be the size of a poker chip or a silver dollar. Not too big, not too small.
Bake one cookie sheet at a time [ usually, they hold about 12 cookies each sheet ] for 10 to 12 minutes [ until they’re brown around the edges ]. Remove from cookie sheet when they’re done and place on a plate to serve. Perfection!
