GAHHHHH.

Just when you think brownies can’t get any better, PLOT TWIST— THEY CAN.

BECAUSE when you get to eat brownies full of zucchini & they taste the same? Eer, what the hell is better right?

Remember that one book called The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids Favorite Meals all about hiding veggies & fruits in children’s foods? I feel like adults should eat out of that book too. CLEVER RIGHT. I mean why not eat something amazing with some added nutrients.

Especially when they taste like THIS.

This specific recipe is from cutie Jordan of Skinny Girl Standard. She’s an adorable blogger who recently featured TSC Cotton Candy Ice Cream ( if you haven’t had that recipe, you haven’t lived. So check it out ASAP ). Anyway, Jordan has some bomb ass recipes with half the calories without compromising the taste. So nudge, nudge, go check out her blog & get lost for a little while. You’ll have some fun, trust me.

Anyway, let’s get down to business.

( Pause: if you’re like ‘WAIT, what? Lauryn, chocolate & zucchini?‘, then HOLD UP because you can’t judge until you try these, they are seriously SO good. You literally can’t taste any trace of zucchini so if you have kids, MAKE THESE! ).

Recipe details? Glad you asked:

FREAKING  Zucchini Double Fudge Brownies

1/2 cup liquid egg-whites
1 tablespoon pure vanilla extract
1 tablespoon of Kerrygold pure unsalted butter
1/4 cup + 1/8 cup of organic real Stevia
1/4 cup unsweetened applesauce
1 cup organic whole wheat flour
1/2 cup raw unsweetened cocoa powder
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
1/8 teaspoon salt
2 cups chopped zucchini
1 handful of dark chocolate chips

+ Directions: Preheat oven to 350F. Mix together all wet ingredients— including applesauce, & Stevia. In a separate bowl, mix together all dry ingredients ( excluding chocolate chips ). Now, combine both wet & dry ingredients. Mix together, getting rid of clumps, but be careful not to over-stir. Pile 2 cups of zucchini into a blender and blend just until zucchini has been chopped into very fine pieces. Before pouring zucchini into batter, drain excess water from blending. Add zucchini into mix and stir until combined. Add 1 handful of dark chocolate chips into brownie batter. Pour mix into 8 x 8 baking pan, lightly greased with butter, coconut oil or cooking spray. Sprinkle a couple of chocolate chips on top. Bake brownies for about 28-32 minutes.

& there you have it, veggie brownies! Enjoy these brownies with a glass of chilled coconut milk & thank me and Jordan later =).

Also, some of you guys have asked me for a grocery haul & GUESS what? I did a full breakdown today on Snapchat. Like all the details to get my ass back into gear after fatty chips/salsa/margs/queso Cabo kind of breakdown.   3. What! I’ve made black bean brownies but have never even thought about Zucchini brownies…YUM! I can’t wait to try these.

    Add some honey in your tea or some hot lemon water. The honey coats your throat and really does make it feel better 🙂

  5. These look good! I’ve been looking for a scratch brownie recipe, so I’ll have to try this one! Not a big fan of Stevia, but I imagine it can be replaced with any kind of sweetener. Thanks for sharing!

  7. These look amazing! It’s that TOM for me where I crave everything chocolate so this is a perfect way to feed my craving and stay healthy. I’m hoping to make them completely vegan; could I sub coconut oil for butter and flax eggs for the egg whites? I not sure if that will mess with the consistency. Love your blog btw!

  8. Just another wonderful recipe with zucchini. I have made zucchini bread and added chocolate chips but never thought of making the chocolate brownies with zucchini. I always added the chocolate chips because I love chocolate and wanted to make the zucchini bread a little more fun. I can’t wait to try out this recipe it looks really good.
