I love a good crunch.
So not being able to chew for 3 fucking months has been PRETTY, PRETTYYYYY frustrating.
Letting chips melt in your mouth does not taste nearly as good as crunching them down your throat.
Since beginning to learn how to chew again ( eer, semi chew? ), I’ve craved THIS particular salad.
Here’s the back story on the salad: Jessica of the blog, Lookbook Cookbook & I connected a few years ago. Recently Jessica asked me to be apart of her fabulous book ( an extension of her blog ), Lookbook Cookbook. Obviously I said YES!
When I went to shoot the two recipe features I casually taste tested them & literally BECAME OBSESSED.
Two recipes being this Rainbow Slaw AND Sweet Potato Patties ( recipe coming soon ). & you’re obviously not supposed to eat the whole recipe while shooting…whoops.

Needless to say, I am SO, so excited her book is here.
Also, this is a true story: after shooting my feature I CRAVED the two recipes. Seriously. Craved. Especially this crunchy salad.
The salad was just really the perfect salad in every way.
After getting the book in the mail, I made the salad probably at least 5 times a week.
And then I had surgery.
AND the whole time I was down on my ass, I missed the crunchy salad. It’s just such a goodie. Really though guys, it’s the salad of the summer.
Basically it encompasses every salad goal ever. Let me share it so you don’t drool all over your keyboard, k?
Rainbow Slaw Salad:
1 1/2 cups of green cabbage, shredded
1/2 purple cabbage, shredded
1/3 cup of carrots, grated
1/3 cup of red bell pepper, finely diced
1/3 cup of yellow OR green bell pepper, finely diced
1 or 2 green onion stalks, diced
Dressing ( << FAVORITE ):
2 tablespoons of raw tahini
2 tablespoons of organic olive oil
1 1/2 tablespoons of fresh lemon juice
1/3 teaspoon of sea salt
1 teaspoon of water
Directions: save yourself some work grating & just use a sharp knife to slice the cabbage thin, cutting again in a half to make sure it is in bite-size pieces. Add all of the veggies to a large bowl & toss.
Add the dressing ingredients to a small cup or bowl & whisk with a fork. Coat the slaw with the dressing & mix well. Allow to marinate in the fridge or enjoy immediately.

This cookbook is probably my favorite of all time. There are SO many good recipes. Oh, & l’ll share the sweet potato patties another day & trust me, you’ll die. You’ll probably also die over the dessert section. The whole book is inspo x a million.

Yum yum cabbage is so good to fight off free roaming estrogens (cause of weight gain in hips and thighs) so this is defiantly on my list to enjoy this week! Thanks for sharing xo C

Love this salad! I do one very similar but Asian style. Same ingredients but for dressing, penaut butter, soy sauce, rice vinegar and a dash of chopped coriander. It’s deadly you should give it a try.

im not a huge fan of cabbage but this salad looks really good so I might just have to try it out!
