Yes PLZ! Unreal Lentil, Avocado, Tomato Salad

They’re full of benefits like fiber, minerals, vitamins, AND MOST IMPORTANTLY, they keep everything moving, if you know what I mean. Winky, winky.

Lentils are your friend.

& when you mix them with avocado ( hello healthy fats!! ), fresh herbs, & some olive oil…


This recipe comes from my friends, Megan & Peggy, over at Curry Girls Kitchen. They’re a mom & daughter team who I’ve known since I was born! I adore them both & their recipes are spot on. Highly recommend them all.

AND UM they EVEN DO A FUNFETTI gluten-free cake… I feel like I need to make this next? Funfetti is so festive & nostalgic, this cake is calling my name!

Anyway, this recipe is easy breezy.


Curry Girl Kitchen Lentil Tabouli Salad

{ serves 2 }


1 cup lentils, cooked
1/2 cup tomato, diced
1/2 cup Hot House cucumber, diced
1/4 cup green onion, diced
Handful fresh parsley leaves, minced
3-4 tbsp olive oil
1 Lemon, juiced
Pinch of Celtic sea salt

+ directions: mix ingredients together & enjoy. It gets even better as it marinates. Store in the refrigerator until ready to serve. Watch the recipe video HERE for more info.

+ Note: I added avocado to the recipe!


You can keep this in your fridge for a few days of quick & easy lunch recipes. Just throw it in your Kardashian salad bowl & you’re good to go really.

You should know when eating lentils that “they’re a good source of potassium, calcium, zinc, niacin and Vitamin K, but are particularly rich in dietary fiber, lean protein, folate and iron. The Centers for Disease Control and Prevention reports that eating plenty of nutrient-dense foods like lentils can lessen your risk of many serious medical problems.”

They’re known as one of the world’s healthiest foods. Just make sure you’re cooking them yourself and not getting them from a can filled with random unhealthy ingredients.

I have a little secret to share, that is a TOTAL game changer.

Let me preface this by mentioning for those of you that haven’t realized this about me yet: My ultimate goal is ALWAYS to find ways to SAVE TIME.

TIME is the only resource ALL people have the same amount of, so how YOU use your time can make all the difference. Saving yourself TIME gives you a competitive advantage in EVERYTHING, as long as it doesn’t compromise quality.

Okay, so that being said, my little secret is: I don’t have to go to the grocery store if I don’t want to!

Yep. Here’s why:

I have a TON of delivery services I use to reduce the amount of trips I have to make to the store. Postmates, Blue Apron, Amazon PrimeAmazon FRESH, the list goes on & on.

I still go to the store whenever I need one-off items for a recipe, if we ran out, or just to browse for new things to try, etc. There are some things though, that I ALWAYS have delivered via Amazon Prime. Consider these my staple deliveries, that I’ll always order online.

ONE: Organic Bee Pollen

the hot new superfood of 2016 | by the skinny confidential

HELLO 2016.

You know how it goes, there’s always an IT, MUST TRY, OR YOU’RE NOT COOL food of the year? Like remember when kale was THE thing? And acai was a nearly magical, unattainable fruit? And of course, you must have had a wheat grass moment, no?

Well let me introduce you to the superfood of 2016, k: pulses.

Wait huh…???

Pulses, guys are like chickpeas, lentils, dry peas, & beans.

They also happen to be the most inexpensive proteins AROUND. You heard that right, lentils are freaking 10 cents to quinoa’s 59 cents or beef’s $1.49. WHOA ( apparently I’m full of facts today ).

Here’s another weird-ass, random fact: people are using them in smoothies, main dishes, AND EVEN in ice cream.

Try first before you judge.

Here’s why I’m in love with this hot, sexy superfood:

♡ they’re loaded with protein, fiber ( << great if you wanna keep things moving—- wink, wink ), vitamins, & minerals.

♡ pulses have been shown to lower the risk of heart disease & diabetes, lower blood pressure & cholesterol, ANDDDD help with weight loss.

♡ the fiber thing is BIG because that’s linked with weight loss & feeling fuller.

♡ pulses have more antioxidants than blueberries or pomegranate juice.

♡ …AND GUESS WHAT? They’re considered a protein AND a vegetable.

My favorite part of this superfood is it’s also kind of a SUPERHERO. Why? Because it will play an intense, life-changing role in meeting future food needs for people who need more food supply.

I’m in.

My favorite ways to eat these superfoods:

I’m kind of obsessed with steaming spinach & then adding cooked lentils with raw goat cheese, lemon, & chile flake. THIS IS SO GOOD, & SO EASY. Lentils are in my fridge pretty much all the time.

Chickpeas= bombass hummus. If you follow me on Snapchat ( username is laurynevarts ) then you know we made fresh hummus the other day. Seriously tastes SO much better than store bought crap.

As far as dry peas: cook them & add them to pastas, salads, or soups!

Lastly, I love adding the beans to organic sausage, kale, & white bean soup. Literally insane. Here’s my favorite recipe:

White Bean Kale Soup

2 tablespoons olive oil
1 onion, finely chopped
3 large carrots, finely diced
3 large celery sticks, diced
1 1/2 garlic cloves, minced
2 bay leaves
1 1/2 cups of white beans
1 to 2 bunches kale, stems removed & roughly chopped
52 oz. good quality low-sodium chicken stock or bone broth
Pink Himalayan sea salt
Ground pepper
Little bit of chile flakes
Meyer lemon
A sprinkle of Gruyere cheese

+ Directions: In a large pot, heat 2 tablespoons olive oil over medium heat. Add onion, carrots, celery, & bay leaves. Add some kosher salt & cook until vegetables begin to soften for about 10 minutes. Add garlic & organic white beans, and cook for another 2-3 minutes. Add kale, & cook until it becomes a bit wilted. Add chicken stock, season with salt & pepper. Bring soup to a boil, then reduce heat & leave it at simmer for about 45 minutes. Cool soup completely & then refrigerate it for the following day. Sprinkle with grated Gruyere cheese, lemon, & chile flakes & broil for 2 minutes, until cheese is melted. YUMMMM.

Next time I whip this soup up, I’ll take some pictures. For the record, Michael slurps this down like his pork ramen ( you get it if you watch Snapchat ).

Lately I’ve been crazzzzzy over lentils!

Doctor Oz. says that lentils are one of the top three foods that make you, uh, well, go to the bathroom. You know, you know…help you to flush your system out ; ).


Anyway, these ugly, little beans are full of sexy benefits. To name a few:

+ Protect your boobies (!!!): lentils contain more important B vits than any other plant food. Vitamin B6 helps reduce women’s risk of developing breast cancer!

+ Fiber: this makes the digestive system “clean out.” Fun shit. Literally.

+ Impressive amounts of iron & protein: the beans are filled with iron & protein.

+ Anti-aging: superfoods like lentils provide anti-aging benefits.

 + A natural weight-loss food: they reduce the appetite because they’re filled with fiber. Buh-bye temptation!

See?! They’re amazing!

Add them to: salads, sweet potato soup, curry, stew, pasta, eat them plain, &/or try this carrot/onion/celery soup I made on Monday night ( note: naturally I added lemon to the recipe ).

So puh-lease! Next time you’re in the bean section, don’t ignore the poor lentils!

Tips on how to eat healthy around people who eat like shit.

[ Some of my staples: lentils, hummus, cottage cheese, Suja, berries, eggs, & light cheese ]

Friends don’t let friends eat like shit!

Thank God my family & friends are health conscious. Having healthy people around makes it so much easier to fuel my bod with the proper nutrients. My GF’s & I are always sharing health tips, tricks, & exchanging new/healthy product discoveries.

Lately I’ve received a lot of e-mails that go something like this:

Hey Lauryn, I’m really into taking care of myself & eating healthy. My roommates make snide remarks because while they’re eating cookies & chips, I try & pick better options. Sometimes it’s to the point where I give in to eating the shitty foods so they lay off me. Any tips?”

Here’s my tip. Find new friends.

Kidding [ sort of. ].

No really, here’s my tip: tell your friends not worry about what you’re eating- because when Summer 2013 rolls around you’ll be feeling confident & bikini ready. I mean, they should really worry about something else.


I’m all about balance, so having people around me who are balanced works best for me. If your friends can’t accept that you don’t want eat sugary, processed crap, then that’s their own f’ing problem. Like, sorry I’m not sorry that I eat fresh foods.

Good food is wise medicine.”
