The smell, taste and look of pumpkins represent autumn. I love adhering to seasonal recipes, so these particular low calorie pumpkin muffins [ about 90 calories a muffin ] were a delicious portrayal of fall. I made these over the weekend for my neighbors and friends with many requests for ‘seconds’. These spider pumpkin muffins came out warm, tender not too sweet. They also were the perfect complement to my cup of nightly green tea.

Pumpkin Spider Muffins

** Makes about 20 muffins

2 cups whole wheat flour
2 tablespoon oil
1 can pumpkin
1/2 teaspoon nutmeg
1/4 ground cloves
1 teaspoon cinnamon
1 tablespoon pumpkin spice
1/2 teaspoon salt
1 tablespoon baking power
1 egg [ beaten ]
1 cup skim milk
1/3 cup of organic sugar
1/3 cup of chopped nuts [ optional ]
Heat oven to 400 degrees. Mix dry ingredients together. In a separate bowl, combine wet ingredients. Line muffin tins with muffin liners. Add three big spoonfuls in each liner. Bake for 24 minutes or until golden brown.

  3. When the recipe says to mix the dry ingredients together, does that include the sugar? Sugar is usually considered a wet ingredient and it is creamed together with the butter, but there’s no butter in this recipe. So would I add it to th wet or dry ingredients?
