Five Snacks I’m Currently Dying Over

I’m probs the biggest snacker ever. Three meals just isn’t my thing.

Life’s too jammed packed to whip up multi-grain pancakes for breaky, salmon with a side of organic greens for lunch, & grilled chicken & lentils for dinner.

Plus. I’m bored with three meals. Snacking keeps your metabolism up.

When people ask me about a meal plan, I don’t really know what to say. It switches all the time- depending on my mood, the season ( << for veggies & fruits ), & if Aunt Flow’s in town ( lolz ).

Here’s five healthy snacks that I’ve been obsessing over lately:

1.} Eggs: I scramble two & then throw red onion, tomatoes, & avocado slices on top. Add a dash of pepper & you’re good to go.

2.} Sunflower seed butter: put it on banana slices, apple wedges, low-carb toast, or eat it plain! YUM.

3.} Mini bell peppers: besides the fact that they’re so damn cute, they make a fantastic snack. They’re filled with Vit C, Vit A, & tons of fiber. I whip up the lowest calorie dressing the world, slice the cuties up, & add lemon. Die!

4.} Spelt rice cakes: these feel like you’re eating carbs in all the right ways. These rice cakes are super low cal & low in carbs. I add sunflower seed butter, a bit of honey, & a sprinkle of cinnamon. This is one of my favorite snacks ever!

5.} Watermelon + pineapple: love both of these fruit because they contain a lot of water. I put lemon ( yes, lemon ) on top & add a few spoonfuls of low fat cottage cheese or Greek yogurt for a quick, easy snack.

  1. I was about to do a snack post too! Papaya is my new morning jam, although they are tough to peel. I cut up a whole one and it lasted me 5 days. Pineapple is a no brainer, I def recommend buying a whole one and cutting it yourself instead of wasting money on the pre-cut shit. Also, my new FAAAAVE is a sliced pear, with almond butter and shredded coconut. Green apples work for this too, but the almond + coconut combo is to die for <3

  2. I too have a serious addiction to pineapples. Not gonna lie, my snack choices aren’t ALL quite as healthy all the time, but for a few GF options I love the veggie tortilla chips from TJ’s with salsa, light string cheese, quick caprese (cherry tomatos, mozzarella balls, splash of balsamic, some s&p), and I am loving watermelon as well… but I always add a dash of salt.

    It’s a southern thing I think….

  3. I have never seen sunflower seed butter before. I don´t think they sell that over here. Really curious about the taste 🙂

    1. I just found out that Target carries a brand called Sunbutter. I can’t wait to try it.

  4. These snacks look great, I’m currently on a baby carrot and organic string cheese kick! and of course my apple and peanut butter is a must have!

  5. Love these ideas! Especially the mini bell peppers. A new one that I’m obsessed with is almonds & apple slices with french cheeses (brie, of course.) on whole grain crackers. I was inspired by the Starbucks Bistro Box. It’s definitely more of a meal, though.

  6. Lauren i read your blog almost everyday! You have the greatest healthy recipes and you always look so fabulous. Another great snack i have discovered is sliced apple and cinnamon (the cinnamon is great for your metabolism!) its a great alternative to apple and peanut butter because you dont have the fat from the peanut butter but it still tastes like a treat. Cant wait to try some of your snack ideas

  7. Love your ideas! I’m an avo freak – love them…my current fave snack is chopped avo, chopped hb egg white on low carb toast….mmmmm
