When it comes to healthy cooking my motto is ‘the easier, the better.’

I’m not a fan of recipes with two million ingredients.

You know what I mean: when you’re excited to bake some vegan cookies on a lazy Sunday & the recipe casually calls for xantha gum?

Like, WTF is xantha gum anyway? I mean, I’m sure it’s delicious but it’s not exactly an accessible ingredient ( at least not for me! ).

Any healthy recipe with more than six ingredients tends to entail a lot of time/effort/money.

And heyyyy! I’m all in to getting crazy in the kitch when there’s time, but lately there’s been none. Besides if you’re anything like me, ya keep it simple & clean.

My friend, Mike & I made this salad last week & I’ve eaten it every day since…Hence the name: ‘The Best Salad on Planet.’ I wasn’t going to even post this right away, but after sharing this picture, many of you asked for the recipe. Your wish is my command.

So anyway, guys will fall in love, birds will sing, & bells will ring over this salad. Because honestly? It’s kind of, sort of life-changing.

Trust me, guys- it’s THAT good.

  2. I love an easy and simple salad. Especially when your time poor and ceebs remember a bunch of ingredients to buy at the supermarket!
    For work lunch i cut up a few mini snacking tomatoes, cucumber, capsicum and a (big) spoonfull of avocado. When I get to work I add tuna. Yay.

  3. I’ve been all about the simple salads lately! Today I have smoked mackerel, spring onions, baby leaves, tomato, cucumber, new potatoes Done! And delicious!

  4. Yum! I love fresh salads. I’ve never tried cornishons before… not even sure what they are:/ I love jicama in my salad – nice and crunchy. I also like toasted sunflower or pumpkin seeds on top for some extra depth and protein. I love your photos! So inspiring.

  5. this looks delicious! those tomatoes look gorgeous. I will add though – while I definitely agree about long/scary ingredients, xantham gum is easy to find in most major cities (I buy mine in the regular grocery store – not even a health food store) and actually not expensive (a packet is about $2). just a tiny drop added to a smoothy gives it wonderful texture.

  6. My fave. Just fyi, this is a classic Persian salad (with a slight variation). It’s called Salad Shirazi! We just do it with mint instead of basil. Yum!

  7. My all time favorite salad “dressing” I’ve been making lately is half of a mashed avocado mixed with the juice of a lime wedge, salt, and pepper. It is wonderfully clean and still gives the creaminess as if you’re having a ranch type dressing. Yum!

I make and love a similar homemade variation of this salad: add chopped spinach, some well rinsed canned black beans, sunflower seeds and the key ingredient is chopped mild banana peppers and pour their juice over top with a bit of balsamic. Addition of some chopped cilantro makes it even more fresh tasting! Yummy!
