Ahhhh! I feel so refreshed. Per usual, Sunday we attempted to relax. Turns out, I was exhausted [ sleeping thirteen hours straight confirmed this ]. Today I woke up early, went to Pilates with a friend, & grocery shopped. Lunch was this veggie-filled, quinoa salad before teaching PB.

A couple of you have sent e-mails expressing frustrations regarding healthy living in the college dorms. Here is one [ more to come, I promise ] easy lunch ideas that is universally accessible. The best veggie medley ever: I grabbed pre-made quinoa from my local health food store [ it came mixed with peas & carrots ], & mixed in avocado, cucumber, and tomato pieces.

* Quick Skinny TipIn a restaurant never ask for dressing on the side [ I guarantee you, you’ll end up using way too much ]. Instead, ask for lemon, red wine vinegar, & olive oil. Sprinkle salt & pepper to taste.

Quinoa Salad: Dorm Room Edition

* Serves one.

 

Pre-made quinoa [ found @ any local health store ]

1 diced tomato

1/2 chopped cucumber

1/2 chopped avocado

2 squeezes of lemon

 

Add quinoa to a bowl. Add diced tomatoes, cucumber pieces, & chopped avo to quinoa. Mix medley together. Squeeze lemon to taste.

I just bought a bag of quinoa for the first time and I’ve been trying to figure out a good recipe to try it with! I don’t eat a lot of meat so I’ve been really trying to up my protein with other sources
