Since it’s National Peanut Butter Day, I feel it is more than appropriate to post accordingly. Lately, my nights have consisted of watching season one of the Sopranos [ I know, not exactly avant-garde ], & this soufflé especially hits the spot while I watch Tony perform his mobster antics. Fortunately, the vegan concoction is embarrassingly easy & tends to my nightly sweet tooth. Side note: there’s no reason to consume a gallon of ice cream, when there are delicious, health-concious dessert options such as this little piece of heaven.
Quick Dark Chocolate Soufflé
[ Recipe adapted from The Fitness Dish ]
* Serves one
15 vegan dark chocolate chips
5 heaping tablespoons of raw old fashion oats
1 tablespoon of natural peanut, soy or almond butter
Sprinkle of cinnamon
Dash of nutmeg
Take a coffee mug & fill the bottle with ten dark chocolate chips. Add peanut, soy or almond butter. Add raw oats. Sprinkle cinnamon and nutmeg. Add a couple of extra chocolate chips on top. Microwave for about forty-five seconds. Then stir the ingredients up. Freeze for about ten minutes. Do not freeze for too long; the middle should have a gooey texture!

Glad you like it! This is my absolute favorite treat during the week when I need something sweet! Lately I have been adding one small square of crumbled graham cracker crumbs (the non-hydrogenated ones) at the bottom…and a piece of a banana…sooooo good!
