It’s ironic how winter-time is approaching but the sun is shining brighter than ever [ ahhh, California- you’re mixed up! ]. Although I would have appreciated crisp cool air & hot chocolate weather today, I embraced the sun and made this light pumpkin spice margarita cocktail [ confession: I am writing this post buzzed ].
Quick Skinny Tip: most mixed cocktails are filled with sugar & calories [ but so easy to modify! ]. Instead of having the local bartender use margarita mix, substitute lemon & lime juice with a splash of water. The morning hangover will be so much kinder too!
+ Pumpkin Spice Margaritas
[ Recipe adapted from Martha Stewart ]
* Serve two
1 ounce fresh lime juice
1 ounce fresh lemon juice
2 ounces of tequila [ I used Karma reposado ]
1 tablespoon of 100% pumpkin puree
1 splash Cointreau [ or triple sec ]
1 splash water
1 handful of ice cubes
A pinch of cinnamon
Option: splash of Grand Marnier
+ Directions: Add ice to a martini shaker. Shake ingredients [ besides water ] over ice and strain into a chilled cocktail glass over ice [ option: to rim with cinnamon before ]. Splash water. Garnish with an orange twist and add a pinch of cinnamon.
( Don’t get stuck drinking sugary cocktails – kindly micromanage your bartender when you’re out! )

I seriously can not wait to try this recipe! I am obsessed with skinny margs. I usually make a standard ‘on the rocks’ one with: Clear tequila, teeeny bit all-natural triple sec, juice from 2-3 lime wedges, tiny splash OJ (I use Trop50, 1/2 calories), and a teeeeeeeny pinch of stevia.
I also really, really like frozen strawberry ones: clear tequila, tiny splash triple sec, fresh lime juice, stevia, frozen strawberries, ice & blended.
