Can I just say these mini roll-up are insane?

Especially when I’m running late. Per usual.

Simply grab a slice of low-sodium, organic turkey. Spread one on a Laughing Cow cheese wedge & add a few dabs of country mustard [ << obsessed with this grainy condiment {!!!} ]. Last but definitely not least, add a few cornichons. The mini, pickled gherkins are difficult to find, but worth the search. Quick tip: dip these dimes in roasted garlic hummus for another easy snack option.

On the rare occasion I’m not running late, I’ll whip these up to enjoy with the Nanz. We crack open a bottle of crispy Pinot Grigio, add some green grapes to the mix, & talk shit. Pickles in a blanket are perf for a gossip sesh. Just don’t forget the wine!

  2. OMG love this idea! Have made them twice so far. So filling, low in calories and delicious (I use much less cheese than recommended though). They are perfect. Used dijon mustard instead of country mustard.

  3. I made a version of these with ingredients I already had, and they were delicious! I used organic turkey, Vlasic mini kosher dill pickles, Grey Poupon country mustard, and reduced fat sharp cheddar cheese. Definitely a new lunchbox favorite!
