Holidays are my “cheat days.” When you’re surrounded by friends, family, flowing champagne, & unhealthy, sugar-filled food, it’s nice to indulge a bit [ that doesn’t mean stuff your face till you’re sick- moderation is key ]. Since Easter is this Sunday I spent the past weekend testing out potential festive recipes. These yellow cupcakes topped with fluffy marshmallow chicks [ PEEPS!!! ] are easy to whip together & entirely Easter-appropriate. Also, my cupcake carousel was almost too fun to use for transporting the colorful baked goods- check it out below.
+ Serves A LOT!
1 box of yellow cake mix [ I like this one ]
Depending on what cake mix you use, you’ll also need: eggs, water, & oil
Frosting
Sprinkles
Peeps
See directions on cake mix. Bake cupcakes with pretty liners. Remove from oven. Let cool. Add frosting & colorful sprinkles. Then place Peeps on each cupcake.

Yum!! Those are so adorable. I wasn’t planning on eating bad this weekend and now I reallllly want some peeps! lol. I was going to make a low fat pumpkin pie for dessert, mashed sweet potatoes, and then egg salad of course! 🙂 lol. Any other suggestions for healthy eating this weekend?

Lovely post! The weather has been really weird. One day it feels like February, the next like June. It’s foggy in the morning and sweltering in the afternoon.
