Because peaches and summertime go together like peanut butter/jelly, ketchup/mustard, or Pixy/her teepee.
It just kinda works, ya know?
But wait, this recipe has a little back story: the Nanz ( my BFF AKA my grandma ) & I get love to get ‘recipe inspired.
We’ll always talk about how it’s so annoying when we go to restaurants & they use wayyyyy too many flavors. We prefer simple, fresh ingredients that make sense together. Also, we both have a severe hatred toward Bleu cheese ( but really, what the hell is the point to Bleu cheese? ). We like to substitute old Bleu with Gruyère from Switzerland.
Anyway, I’m getting off topic ( weird ).
Last week’s get together included lots of: prosciutto, spicy nuts, summer water AKA rosé, peaches & cornichons, among other things. BTW: if you’ve never had a conishon, you’re seriously missing out on life. Do yourself a huge favor & eat a couple of cornichons AKA gherkins with a little cheese + grapes ( you’ll die. Just die ) )).
What else to add to our summer get together?
Uhhh, duh: Gruyère!!
Pretty much, this is the perfect, easy summer snack/meal. All you do is:
Grill about four peaches ( slice in half ), add a little olive oil, & grill them for about 5 to 10 minutes. While your peaches are grilling, slice some Gruyère cheese. When peaches are done add a slice of cheese, wrap a piece of prosciutto around each peach, add a dabble of arugula, & a squeeze of lemon. Add a side of spicy nuts & tiny pickles for a little flair.

After our meal was ready, we went out to my balcony, turned on Marvin Gaye, & gossiped with Pixy.
Ultimately, my memories with my grandma are are my absolute favorite so this recipe is super special! I hope you enjoy it as much as we did. The flavors are mouth explosion.
Also, we definitely agreed that it wouldn’t be nearly as tasty with Bleu cheese. Just saying.

Sounds like a great recipe !! I’ll have to try- heads up on the peach recall that was going on last week or so! Trader joes was on the list as well as Costco and a few other retailers- I believe both yellow and white peaches, plums, and nectarines. They were all containing the bacteria listeria.

This looks delic…I love everything peaches too! This summer I have been obsessed with chicken and peach skewers and goat cheese and peach pizza.
You make me miss my grandma so much! She passed away a couple of years ago. As a former model and a total foodie, she was super into fashion and food and she would have loved to do something like this with me. I love that you spend time with your grandma. It’s a really special thing. <3
By the way, I recently found out I have an underractive thyroid, and I have to avoid foods with goitrogens. PEACHES are on every list of goitrogenic foods. How's that for a major suck fest? Although supposedly cooking goitrogenic foods kills most of the goitrogens…so maybe I can have grilled peaches? Wah. (What even ARE goitrogens?!)

Not gonna lie, the fuzzy skin of peaches freaks me out. Peeled = great, but skin on = nightmare.
