Summertime & the livin’s easy…but seriously—- so, so much easier though. I swear it feels like summer is just kinda a no bullshit season.

The music is more chill, the sun’s brighter, people are happier, & the food is better.

Right?!

If you’re anything like me, you can’t deal with the warm weather without a good, old fashion pasta salad. Like, it should be mandatory that everyone enjoys a sexy pasta salad at least five times throughout the summer months…& if you add a lil rose, you’re golden.

Let’s make this easy & not get so intense on the recipe:

So without getting technical, here’s what I did:

I grabbed some leftover veggies in my fridge ( think: radishes, broccolini, cherry tomatoes, zucchini, mushrooms, & corn ( non-GMO! ) ) & grilled ‘um up on the BBQ.

Side: summer= BBQ. You can wear a cute outfit while you’re grilling on the BBQ, kinda like a new age, cool Martha Stewart.

Ok, & then I whipped up some gluten-free pasta ( not too much because you’re going to add your grilled veg ) & add your BBQ veggies. Lastly add some fresh arugula lettuce, black olives, & lemon slices on top! MMMMMmmm.

Ta-da! Presenting: easy-peasy-your-boyfriend/husband-will-thank-you-later-summer-salad!

If you want an added crunch, then sprinkle the little wonton sticks above on top ( BTW, what the heck are those called? I can’t figure it out for the life of me. I’m sitting her Googling ‘long wonton sticks,’ ‘long noodle sticks,’ ‘crispy noodles’— FML, anyone know? ).

Anyway add those little guys for a crispy, fun party in your mouth.

& rosé wine pairs ESP well with this salad. I tried Brad & Angelina’s rose with this particular summer salad & it was actually pretty amaze. Try it next time you’re at Whole Foods. It’s called Miravel. Thank me later.

  1. Yum! My favorite pasta right now is Yam noodles they are so delicious and full of fiber! I wish I could have a grill out here in Thailand but we cannot or else I would be grilling veggies like it was my job 🙂 lots of love ox C

  4. I’m so into salads at the moment! My favourite is mixed lettuce with sundried tomatoes, half an avocado, almonds, raisins and caprino with a drizzle of basil mayonnaise. Love the sound of BBQ veggies!! xxx

  5. I love grilled veggies anytime, but especially during summertime! My sister and I brought some to a potluck the other day because we just knew there would be potato salad for days! I love the name of this ‘Sexy Kitten Pasta Salad’ – so cute!
