Having apple pie for breakfast whenever you want, guilt-free sounds better than…ANYTHING?

WELL. I’ve been eating this apple pie every morning for the past couple weeks & I feel GREAT. This little recipe is 1.) quick/easy/tasty, 2.) filled with fiber, 3.) superrrrr filling, 4.) promotes healthy bacteria in the digestive tract, & 5.) lowers blood sugar.

UMMMM YES.

But we’re not talking about sick-o Marie Callender’s boxed pie guys.

This apple pie is from the book The Suja Solution! In the book, my friend Annie talks about green apples. She basically says they’re “lower in sugar content than red or pink apples, they contain pectin ( soluble fiber that’s full of nutrients ), and green apples lower blood sugar levels.”

After reading this tidbit of knowledge I headed to the store & stocked my fridge with green apples to make ‘apple pie’ AND to grab when I want a quick snack ( literally PERFECT for throwing in your handbag, LIKE PERFECT ).

Are you salivating yet?!

Ok here’s how you make it:

1 cup unsweetened coconut milk
1/4 raw chia seeds ( I added my magic seeds to this recipe too! )
1 Granny Smith apple, chopped
Cinnamon
Pinch of nutmeg
Pinch of turmeric ( I added this, Annie uses cardamom instead, which sounds good too! )
Liquid Stevia, 2-4 drops
1 tablespoon unsalted walnuts, chopped
Option: 1 sprig of mint

Directions: first off, make this the night before so it turns into a pudding consistency. Plus if you make it the night before breakfast is ready to go ( sometimes I eat this in car, no shame in the game! ). The book says “before bed, place the milk, chia seeds, cinnamon, nutmeg, cardamom ( or turmeric ) & stevia in a bowl or mason jar. Stir the ingredients together really well, making sure the chia seeds are evenly distributed & not clumping. Place the bowl or jar in the fridge, allowing the mixture to gel up to a thick, pudding-like consistency overnight. In the morning, remove the mixture to a bowl & add the chopped apple & walnuts on top. Add a sprig of mint for garnish.”

Not only can you eat this for breakfast, you can eat this for DINNER TOO!! Or lunch, or a snack, or whatever. It’s kind of like pudding apple pie!

You guys know how I am about routine, I’ll become like full on addicted to something ( exhibit a: chia seeds, b: coconut milk, c: the sleep bun, 4: this red lipstick on repeat, 5: sashimi ) & I just do it over & over & over again. I’m not one of those people who needs a different kind of breakfast every day. I’m happy eating simple, clean meals that are predictable ( but creative!! ).

And this has become a daily staple.

  2. I love recipes like this because it’s not just healthy but you can have it at anytime. And I’m also really into finding things that I can substitute as dessert when I’m craving something sweet. Can’t wait to try this & your photos made it look mouth-watering!

  4. Sounds sooooo good! For years I’ve just been dicing up green apples, adding a tiny bit of water and cinnamon and popping it in the microwave for a warn porridge-esque thing. (This sounds so much better though!)

  5. I just started watching Entourage too! (the show, not the movie) and I AM OBSESSED WITH IT.

    I hate to admit it, but Ari is my favorite. The way he talks to everyone and bullshits everybody makes me laugh. But the best part of Ari so far – Episode 13 of Season 2. At the end. All I’m gonna tell you.

    Please let me know what you think about it. I want to watch the entire series (all 8 seasons) before I go see the movie.

  7. Can you substitute coconut milk for any other non-dairy milk for this (almond, soy, cashew, etc) or will that mess with the consistency?
