This upcoming weekend go grab some Corona Lights, skinny street taco supplies, a bunch of limes, & whip up this sexy dinner for your babe [ << trust, trust; he’ll <3 it ]. A couple Sundays ago, we lit some vanilla candles & played Frank Sinatra while I made these for Michael. Whenever there’s a DIY taco night, I always display an array of essentials [ light cheese, Pico de Gallo, cilantro, corn tortillas, onions, etc. ].
+ Quick skinny tip: serve a salad first [ w/ this super low-calorie dressing ], so you won’t feel like stuffing ten tacos down your throat! Salud!
Healthy Street Tacos:
{ Serves 2-3 }
Your choice of meat [ I prefer grilled chicken &/or lean carnitas ]
1 handful of cilantro
1 handful of a light Mexican cheese blend
Pico de Gallo
Chopped onions
3 limes
A couple of corn tortillas
Sea salt & ground pepper to taste
Optional: cold Corona Lights & hot sauce
Directions: grab five small bowls. Dice your onions & small pieces of cilantro into one bowl. Then separately add Mexican cheese, sliced limes, Pico de Gallo, & diced cilantro to the other four bowls. Cook your meat [ stovetop or on the BBQ ] to your preference with a bit of sea salt & ground pepper [ if you want to add oil, use EVOO ]. Heat your corn tortilla stove top, once your meat is finished. Try to serve this dish with a light salad. Allow people to make their own tacos after you have presented all the ingredients too.

One of my man’s favorite meals is D.I.Y. Mexican night! I’m sure the Low Cal Margaritas I make don’t hurt 😉
My Michael is a huge Mexican food fanatic and we both decided that we need to seriously rev up our diets for a scalloping trip at the end of August. This is is a great dinner that will satisfy his craving but without being so bad. Very stoked to test this out!

So disappointing that you talk all about “health” but know practically nothing about it. It’s established scientific fact that eating animal products causes at least 80% of all human diseases and mortality. You make consumption of it look and sound so pretty and wonderful when in fact you’re promoting sickness and death to your audience who apparently doesn’t know any better either. I really wish that people like you who are trying to do good would learn the facts about what is actually heathy. nutritionfacts.org is a good place to start.
