Really, how the hell does she look SO insane after 3 kids? Crazy. Wellllll after reading her book, I found out.
That’s right, she shares all her favorite meals, recipes, workouts, secrets ( hint: she eats CLEAN, unprocessed foods— shocking! ) in her new book Balancing In Heels.
To be real, I may or may not have read the entire thing in one sitting…in the dark on my iPhone from 1 AM to 4 AM like a creep. Clearly it was difficult to put the book down because A LOT OF RECIPES stood out.
I ESPECIALLY FELL IN LOVE with her mouth-watering almond butter sugar cookies.
If the thought of these don’t make you drool then I don’t know what will? The ingredients are so pure & clean that when you have one bite you will just get it.
Recently we made them for friends & honestly everyone was shocked at the ingredients because they legit taste like Mrs. Field’s Cookies…but unprocessed.
The whole recipe was so simple that I actually plan on making them once a week to have on hand when I’m craving something sweet. EASY is my thing guys.

For the record, I was very pleased at my homemaking attempt here- so much so, that I feel like I deserve a gold star. Nothing better than having fresh, clean cookies coming out of the oven at 6 PM. CALL ME June Cleaver.
Let’s get right down to the recipe, k?
Kristin Cavallari’s Almond Butter Sugar Cookies
1 stick unsalted grass-fed butter, softened
1 cup raw coconut sugar
1/2 cup raw almond butter
1 large egg
1 1/2 cups oat flour
3/4 teaspoon baking soda
1/2 teaspoon pink Himalayan salt
+ Directions: preheat oven to 350 degree F. Line 2 baking sheets with parchment paper. Using a mixer, cream together butter, sugar, & almond butter until fluffy. Add the egg & mix to combine. In a separate bowl, mix flour, baking soda, & salt with a spoon. Add the dry ingredients to the wet ingredients & mix well. Spoon tablespoon-size balls onto the prepared baking sheets, keeping a little distance between each ball. Bake for 10 minutes, or until golden brown. The cookies are thin, so keep a close eye on them so they don’t burn. Makes 24 cookies.

This is the perfect combination of all things! I use oat flour all the time in baking, it is the perfect substitute! My hubby can’t eat dairy, so I make a cookie like this with coconut oil instead of butter and it is really delicious! You may like the blueberry cake recipe I shared on Monday 🙂 It involves oat flour, coconut sugar, dairy-free cream cheese, applesauce…so good!

omg yum! These sound so good & EASY to make! I love that they are with oat flour, it’s totally underutilized in general. Coconut sugar is a serious game changer though. I LOVE love love the flavours it lends. The next thing I am going to make are coconut sugar toffees! Literally, line a baking sheet. Mix butter, water and sugar in a saucepan over medium heat. Once it is 300 or so degrees (use a candy thermometer or when it starts to darken and smell nutty), spread it in the tray & top accordingly with coconut shred, those chocolate covered chia seeds, pomegranate, etc. The list is endless! Then after it cools, you can dip it into melted dark chocolate! M biggest tip with dark chocolate – whether it’s brownies / cookies / chocolate to dip the toffees etc, etc, is to add a tablespoon of espresso powder! It will bring out the chocolate flavours! x Shannon

These look amazing! (Much like her bod!) I always use raw coconut sugar in my baking. I just created the best cookie recipe with dark chocolate, shredded coconut and banana to replace the egg. Ah-mazing.

I really love the almond butter cookies from the Gweneth Paltrow “It’s All Good” cookbook. Actually everything in that cookbook is freaking amazing. But they have very few ingredients and turn out amazing. I will have to try these ones too!

These look amazing! But you should also try the dark chocolate almond butter bites, they’re to die for! Literally. And they also taste like the most indulgent thing ever. They’re so easy to make, you just whizz everything in a food processor, roll the mixture into balls, dip into some dark chocolate melted with some coconut oil and your done!

I would have to agree that these almond butter sugar cookies are the answer to our problems. It’s so good and delicious. In fact, it could make a wonderful comfort snack. So, I am looking forward to stock this up before my period comes. Thanks for this wonderful idea.
I’m in the mood to bake and these are right up my alley! Random question- the kerrygold butter (so delish btw) is essentially 2 sticks of butter in one pack (at least, that’s how it’s sold at TJ’s). One stick of butter is typically 1/2 c- kerrygold is 1 cup. Did you use the whole thing or cut it in half? Thanks!
I just made these and added 1/2 cup of dark chocolate chips and OMG, wow!! This recipe is a total keeper!
