BOY OH BOY.

If this isn’t a Skinny Confidential Bombshell Body Guide recipe, then I don’t know what is? Also what’s better than dragon fruit ice cream? The color is just perfection in every way, no?

I found this recipe at like 2 AM while browsing the Internet & immediately knew I HAD TO MAKE THIS FOR YOU GUYS…with a little TSC twist, of course.

You can get fun with this too. BECAUSE TOPPINGS!

I made a simple, clean version but next time I whip up this beautiful, purple-ish pink dessert, I’m doing a topping’s bar.

Think: unsweetened coconut flakes, goji berries, sliced almonds, chia seeds, herbs, &/or cacao nibs.

SO yes to a topping’s bar next time!

Dragon fruit & pitaya is kind of all the rage right now.

Some benefits of the most gorgeous fruit ever?

They’re full of antioxidants, fiber, fight signs of aging, promote healthy hair, help cure acne, suppress arthritis, & soothe sunburned skin.

YUM YES PLEASE.

According to this source, “these fun-looking fruits contain around 60 calories each and are rich in vitamin C, B1, B2 and B3, and minerals such as iron, calcium, and phosphorus. And that’s not all. This is definitely one of the best “super fruits” out there.”

So even if you don’t make this ice cream, add them to your AM smoothie because they’re full of amazing health pluses.

Ok, let’s get down to business. Here’s a quick video to get you guys excited:

Hot Pink Bombshell Body Ice Cream

1 iced package of dragon fruit
1 can of full fat coconut milk ( 16 ounce )
3 organic, cage free eggs
1 tsp organic vanilla extract
3 tablespoons of coconut sugar
1 pinch of pink sea salt
2 squeezes of lemon

Directions: Add a packet of dragon fruit or use the actual fruit, peeled. Combine coconut milk, egg yolks, coconut sugar, vanilla, & sea salt in a blender ( I added a couple of ice cubes too ). Once mixed, place in the refrigerator to cool for a little. Add a squeeze of lemon ( & maybe a sprig of mint! ). By the way, these hand blown glasses are by Westin Mitchell. Enjoy!!

I feel like this would be amazing with a splash of vodka too if you’re throwing a beach bash. Your friends will just die.

And if you want to get super creative, add the ice cream to a fruit shell ( an emptied out  pineapple shell would be very Bossa Nova-esque ).

  1. Lauryn, this looks fantastic! Just one question about the raw egg. Is the thought that the blender heats it up enough to be safe? Have you tried without the egg?

    Hands up for the topping bar! I’d add dark chocolate covered chia seeds. Yummy.

    1. yes i am confused about the eggs too. On the original recipe he brought eggs, coconut milk, vanilla, and sea salt to a boil first.

  4. If you used fresh dragon fruit instead of frozen, do you know how much you would need for this recipe? Just tried dragon fruit for the first time the other day too! YUM!
