My girlfriend, Lauren, adores champagne. Like loves, loves, loves it. She calls herself a “champagne snob.” I happen to be a huge bubbly fan myself, so when she shared this gem of a DIY, I immediately got to mashing work. So…in true Sunday spirit, we celebrated the weekend with fresh white peach bellinis…by the pool…& did absolutely nothing. I highly recommend this particular combination to everyone– you won’t be disappointed.
Ok, back to the bellinis…normally, they’re filled with crap aka Prosecco, sweet liqueurs, & extra added sugars. Thanks, but no thanks! There’s pretty much no recipe here; it’s this simple: use a kitchen hammer to mash pre-washed white/yellow peaches [ about four ] & place the peach purée in the fridge for an hour. Then add two heaping tablespoons of the half-frozen peaches in a chilled flute; pour a Brut champagne on top.
