I am obsessed with Mrs. Renfro’s verde salsa– it’s perfectly spicy, complements blue corn chips better than anything, & just absolutely delicious. This nacho combination has been on my list of “recipes to make” for the past couple weeks, so I was elated when I had a quiet Saturday to cook. The black beans were an ideal substitute for meat; after watching Forks Over Knives I have been somewhat turned off by meat. These easy, guilt-free nachos completely satisfied my Mexican food craving too. Side note: Greek yogurt is an incredible replacement for sour cream!
Guilt-Free Nachos
[ Recipe adapted from Peas and Crayons ]
** Serves two.
1 hand full of blue corn chips
1 half handful of Trader Joe’s quinoa chips
1/2 cup light Mexican cheese
1 diced tomato
1 sliced jalapeño
1 squeeze of a lemon
2 tablespoons of diced onions
3 scoops of black beans
1-2 tablespoons of Mrs. Renfro’s verde salsa
2 dollops of Greek 1% yogurt
This particular recipe can be changed or modified however you like. For instance, instead of tomato, use avocado. If you do not have jalapeños, use chili flakes. Put chips on a plate. Add light Mexican cheese. Microwave for thirty seconds. Remove & add all ingredients, squeezing the lemon last. A Corona Light compliments this dish perfectly!
guilt free nachos… I had to check this out for myself. I had no idea trader joes had a quinoa chips, i bet they are awesome. I am so excited now to try healthy nachos.
I watched Forks Over Knives a few months ago… and am now trying vegetarianism!
great ideas for yummy favorites…just for thought I love Lime squeeze and not lemon. These will be perfect today as it is National Margarita Day…..Celebrate!!!!!
