Not going to lie, I was pretty excited when I got my monthly Shape magazine BECAUSE THEY FEATURED MY PISTACHIO ICE CREAM RECIPE.

EEK.

I feel pistachios are the next big thing.

People forgot about them.

But how good does pistachio fro yo sound? Or shaved pistachios over waffles? Or pistachio trail mix with cacao nibs & spicy almonds?

AND WHAT ABOUT 4 INGREDIENT PISTACHIO ICE CREAM?

YES.

That’s what I’m talking about. Plus this recipe takes 5 seconds & I guarantee you have all the ingredients in your fridge now.

So for those of you who don’t get Shape magazine, here’s the recipe:

Like I said, this is an easy-ass recipe that has FOUR ingredients. Plus you can’t blame me: my mouth is banded shut with rubber bands…which means ice cream or anything cold & creamy is the theme around here. This recipe has been one I can actually eat plus it’s full of protein.

TSC’s Pistachio ‘Nice Cream’

Handful of unsalted pistachios
2-4 scoops of raw almond butter
A few splashes of unsweetened almond milk ( w/o carrageenan )
1 banana, sliced & frozen

Directions: crush/muddle pistachios in a bowl. Add everything to a blender & blend. If you’re in a hurry, use a banana that’s not frozen & add ice instead. Garnish with shredded pistachios. Yum, yum.

Oh, & here’s why I love pistachios:

Healthy Heart: One of the biggest health benefits of pistachios is that they are heart-friendly nuts. Research on pistachios suggests that regular pistachio consumption can decrease the levels of bad LDL cholesterol in the body. The antioxidants, phytosterols, unsaturated fatty acids (both polyunsaturated and monounsaturated fatty acids) are great for promoting a healthy heart.

Weight Management: Pistachios are also the first choice for people who are dieting. Evidence suggests that pistachios, with their lower calories, high protein, low saturated fat, and high unsaturated fats, are an ideal contender as compared to other nuts and dried fruits for ideal weight management.

Eliminates Skin Dryness: Pistachios also help in eliminating dryness from the skin. The saturated fat plays a major role in this aspect. The fat also acts as a good carrier or base oil as it is used as an ingredient in traditional therapies like aromatherapy and traditional massage therapy.

Dietary Fiber: One of the other health benefits of pistachios is that it is a good source of dietary fiber, which helps in the smooth digestion of food. A serving of about 1 ounce or 30 grams of pistachios contains about 3 grams of dietary fiber, more than enough to get your digestive tracts working at optimum capacity.

Antioxidant Properties: Even the shells of pistachios are found to contain a considerable amount of antioxidants. Antioxidants neutralize the free radicals that form in the body after cellular metabolism and can cause conditions like cancer and heart disease.

Defense Against Diabetes: One of the final health benefits of pistachios is that they function in controlling diabetes. In people suffering from diabetes, the sugars form inappropriate bonds with proteins and make them unusable. This process is known as glycation. The antioxidants present in pistachios help in reducing the process of glycation and thus can help in controlling diabetes.

Absorption of iron: Pistachios have a high copper content, which helps in the higher absorption of iron into the body from food sources. This can help combat conditions like anemia.

  2. Holy smokes this looks amazing! If you’re going to have a little treat, why not make sure it’s loaded with goodness?? Pistachios are actually my favorite nut – especially when the shells are already off so I can put less work into eating them 😛 xoxoxo – hope you are feeling better!

  3. Pistachios are my FAVORITE!! OMG when I was a kid, it was my top 3 fave ice cream flavours. I loved that it was so mild with that slightly nutty flavor. So good! There was one brand…Breyers I think, that had little pistachio pieces in the ice cream and I remember my parents getting mad at me because I’d pick out all the pieces and put it in my ice cream bowl haha. I still absolutely love pistachios but they’re one of the more expensive nuts to buy so I don’t get it that often.

  4. ABSOLUTELY LOVE THIS! I grow pistachios!!! I’m hoping to go organic before they are producing, however, it is not necessarily the most practical. There are not very many organic products (herbicides, insecticides, fungicides) registered for use on pistachios that actually work, and pistachio trees are very susceptible to disease pressure and insect damage.

    Instead I tend to follow sustainable practices… Get out there, handle a dirty hoe 😉 and get after those weeds (great exercise)! I also plant vegetables in the orchard rows to share water when irrigating!

    What brand of pistachios do you buy??

  5. This sounds so yummy! I love making banana ice cream! I sometimes do a variation of this recipe with one frozen banana, almond milk, 3 dates pitted, cinammon, coconut flakes, almond extract and caco nibs. i dont blend it too much cause I love the chunky chewy texture!

    I’m obsessed with your chia seed jam recipe. I do it all the time. I would love to see a quick pasta recipe with homemade sauce!

    Maybe some quick baked desserts too would be awesome

  8. My friend makes an amazing pistachio crusted chicken. She grinds the nuts in a food processor. So much healthier than regular breading.

I read where all you have to do is pure frozen banana slices until the starch breaks down and it turns right into creamy soft serve style – and if you want to you can add things like peanut butter or nuts and then if you want it more like regular ice cream, you put it in an airtight container in the freezer – and then you can scoop it like regular ice cream. Although I can see where the almond milk and butter would mean you could use less bananas and maybe that would lower the carb content.
