The Best Thing Ever: Breaky for Dinner

This month is my blogiversary…it’s so weird to think last September I launched The Skinny Confidential. Ahhhh—!!! Craziness!

Throughout my blogging experience I’ve met some amazing people via cyberspace. One of my favie health bloggers is Kelly, from Eat Yourself Skinny; so to celebrate TSC blogiversary, I’ve adapted her ‘Spinach & Egg White Omelette’ recipe for all you sexy babes.

Oh, & I definitely made this for dinner. Because everyone likes flaxseed pancakes/egg whites/fiber-filled cereal/anything breakfast-related for din din, right?

+ Breaky for Dinner: Egg White Omelette

[ Recipe adapted from Eat Yourself Skinny ]

+ 3 egg whites

+ 5 grape tomotoes

+ Handful of arugula [ Kelly used spinach; either way works ]

+ 1/2 cup of white onions

+ Sea salt/pepper, to taste

+ A bit of EVOO

Directions:

Preheat the oven to 400 degrees F. Spray a medium skillet with olive oil. Sauté your chopped onions for three minutes. Add arugula & sauté until lettuce is about to wilt.

Place that combo mixture in a a small skillet or dish & crack three egg whites over top. Season with a pinch of salt and pepper, add sliced grape tomatoes, & bake in oven for 17 minutes. Serve with fresh strawberries!

  1. Ummm YUM!!!! Definitely making this! I love Eat Yourself Skinny too. I’m obsessed with arugula so I love that you adapted the recipe to include it. I need this in my life immediately.
