
Recently, Pure Barre Solana Beach celebrated their third year anniversary with free classes, beauty treatments & other goodies. I was in a bind because I wanted to bake cookies to go along with my brochure presentation, however my time was extremely limited. I ran out to Jimbo’s and grabbed two boxes of gluten-free cookies and used this quick recipe for all of my lovely clients. They’re called kitchen sink cookies because I threw a bunch of ingredients in without measurements. These cookies are my new preferred dessert; their crunchy exterior is irresistible & they’re 80 calories per cookie. Happy 3rd anniversary to Pure Barre Solana Beach!





Crunchy Kitchen Sink Cookies [ Gluten-Free ]
** Makes about 40 cookies
2 boxes of any gluten-free, cookie chip cookie mix [ I used Arrowhead Mill’s ]
3 1/2 handfuls of gluten-free cornflake cereal
1 1/2 handfuls of unsweetened coconut flakes
2 organic eggs
1 1/2 tablespoons of soft unsalted butter
1/4 cup of organic 1% low-fat milk
Pre-heat over to 350. In a bowl mix all ingredients together, but add cornflakes last. Try not to mash the cornflakes. Make small balls of cookie dough and place them on an dark coated cookie sheet. Put the cookies in the oven for 14 minutes, or until golden brown. I like to make them small so they are bite size [ less calories ]. Make sure to chill a glass of non-fat milk in the fridge & enjoy it with your cookies!
