Lo Bosworth ring a bell?
Probs. Especially if you were born in this century.
I mean…I feel like the “The Hills” was sort of a given via the 2000’s.
I was more concerned with who was hooking up with who & what size Heidi’s latest boob job was than I was with college…#guilty.
Anyway, Lo Bosworth was always a fav on the show so it’s really, really rad to see her killing it at life. She’s making moves as a legit chef, blogger, YouTuber, & author…you guys know how I love woman entrepreneurs.

Ok, so read on to see Lo’s favorite superfood, workout, & beauty tip:

Lo Bosworth: Hi! I’m Lo Bosworth. I’m training to be a professional chef at The International Culinary Center in NYC and I absolutely love it. My goal is to eat healthy, pure foods that taste great so that definitely influences my cooking style. I’m a southern California girl living in the city and plan on sticking around for a while. The food scene here is incredible!
| How have you changed since Laguna Beach & The Hills? |
LB: Entering my late 20’s has affected my lifestyle choices above all else. I eat healthy, I exercise four to five days a week, I hang out with awesome people, & I’m focused on building a career for myself in the food space. Becoming a full-fledged adult means being accountable for your every action.
| How healthy cooking has impacted your life. |
LB: Cooking healthfully is of the utmost importance to me. I only have this one body & this one life, so putting clean, pure, & healthy food in to fuel my day is very important.
| Favorite superfood ? |
LB: My favorite superfood is pumpkin. It’s the most versatile superfood I’ve encountered yet in terms of cooking. It works equally well in savory and sweet dishes.
| Favorite healthy dish to make your boy? |
LB: I love making homemade sushi & sashimi with different sauces I mix up in a blender. I mix traditional Japanese flavors with fruits and veggies for a unique raw experience.
| Workout schedule? |
LB: I try to get my exercise in early before my day starts. You can find me at SOULCYCLE in the 6 and 7 AM classes!
| Quick tip? |
LB: Drink water before you get thirsty!
| Best advice? |
LB: At the end of the day, nobody can take better care of yourself than you do.
| Beauty must have? |
LB: A good waterproof mascara— if applied after you curl your eyelashes they actually stay curly!
| Quick, easy, healthy recipe you would cook for your girlfriends? |
LB: I love making them roasted peppers stuffed with quinoa and ground turkey. They love them!
Ingredients:
+ 2 large peppers
+ 1 pound ground turkey
+ 1 small onion, diced
+ 14.5 oz can organic fire roasted tomatoes and green chilies ( can use fresh if desired )
+ 1/3 cup uncooked quinoa
+ 1 tbsp Worcestershire sauce
+ 1/2 tsp Italian seasoning
+ 1/2 cup raw cheese of choice
+ 1/2 cup water
+ 1/4 tsp unrefined sea salt
+ 1/4 tsp black pepper
Directions: Preheat oven to 375F. Halve peppers lengthwise, remove stem and seeds and immerse peppers into boiling water for three minutes. Drain on paper towels and sprinkle the inside of the pepper with some salt. In a skillet over medium heat, heat turkey and onions till onions are tender and meat is cooked ( about five minutes ). Stir in uncooked quinoa, water, undrained tomatoes and chilies, Worcestershire sauce, Italian seasoning, and salt & pepper. Cover and simmer for eighteen minutes. Remove lid and add 1/4 cup raw cheese. Fill peppers with meat mixture and put in a 8 x 8 x 2 pan and bake for fifteen minutes. Remove from oven and top with remaining cheese ( 1/4 cup ) and put back into oven for five minutes. Serve hot. Recipe found here.

Omg Lo was a fav on the hills for sure..such solid advice. Being a foodie myself I love that she is entering the food world! Can’t wait to see what she creates…hoping for a healthy restaurant in San Diego 🙂

Both Lo and Lauren Conrad have truly done something with the fame that got from MTV. I follow Lo on Instagram and see all of her culinary creations. I look forward to see what’s next from her. Did you get to meet her in person for this interview?
I had NO idea she was cheffin’ now! I love her, and I loved her on the hills! She is such an inspiration to chicks like me!
Good for her! I like her emphasis on how our health/appearance/life really just falls on us. No one else is gonna take care of us and we’re responsible for our own biz.
Everyone is so obsessed with Soul Cycle! I just cannot get into it myself, but hey, each to their own! 🙂 I will however be checking out that mascara!
