
Pasta is a universal staple. Its texture, diverse shapes & the way a big, red wine complements it- is all so alluring. I created this quick and easy recipe for pasta lovers [ like myself ], that want to enjoy one of most popular dishes in the world [ in a low-calorie and healthy way ]. In this easy recipe, I used veggie pasta from Trader Joe’s [ made from real vegetables ], added tons of veggies like broccolini [ mini-broccoli ], light sauce & finished it off with grated Parmesan & fresh basil. We paired it with a bottle of Hidden Ridge cab & the Charlie Sheen Roast.





Broccoli Veggie, Low-Calorie Pasta
* Serves two to three people
2/3 a box of Trader Joe’s vegetable pasta
6 pieces of broccolini
1 green bell pepper [ sliced ]
1 red bell pepper [ sliced ]
1 yellow bell pepper [ sliced ]
2 cloves of thinly sliced garlic
3 pieces of thinly sliced fresh basil
2 large scoops of fresh tomato sauce [ I like Trader Joe’s all organic ingredient sauce ]
A sprinkle of grated Parmigiano-Reggiano cheese
1/2 a lemon
A dash of chili flakes
Cook pasta in boiling water. Add chopped-up broccolini after five minutes. Drain pasta and broccolini after another three minutes. Place pasta back in pot and add sliced peppers, garlic, a squeeze of lemon, and a pinch of cheese. Add sauce in slowly and mix around for one minute. Scoop into bowls & sprinkle fresh-grated Parmigiano-Reggiano cheese, add another squeeze of lemon, basil, and a dash of chili flakes.
I think it will be altho I didn’t try it before. but no problem broccoli veggie pasta recipe is very easy which you mentioned. But I have confusion that, maybe it will be a high-calorie recipe. So will it be right to consume the children? Thanks a lot, Lauryn, for giving a delicious recipe.
