Summer Salad With Zero Calorie Dressing
Since being home from vacation, I’ve been trying to eat super clean. Europe was a lovely experience filled with bread, wine, & pasta, and although we walked everywhere, I came home feeling disgustingly, overly, way too bloated. Needless to say, the “I’m off vacay feeling, ate too much crap, & need to step it up ASAP” feeling hit me immediately after I exited customs.
Some of my post-trip meals/snacks: tons of vegetables, summer fruits, sashimi, low-sodium soups, Boca burgers, arugula, eggs…& this little dime of a salad. This recipe is definitely one of my skinny tricks: it’s filled with water-filled fruits, zero calorie [ yes, zero calorie ] dressing, & the no fat, no sodium, energy-boosting veggie, cucumber [ <3 to put a few refreshing slices of this in my sparkling water too ].
A Sexy, Summer Salad:
Serves 2-3
1 cup of watermelon chunks
1 cup of hothouse cucumber, sliced
About 10 cherries, pitted
1 medium nectarine, sliced
1 1/2 tablespoon of red wine vinegar
1/2 lime juice, squeezed
1 sprinkle of sea salt
Directions: grab a big bowl & throw in watermelon chunks, cucumber slices, cherries, & nectarine slices. Add red wine vinegar, lime juice, & a sprinkle of salt. Toss lightly with a big spoon. In case you’re wondering, the dressing is the red wine vinegar + lime juice + sea salt = 0 cals. So easy, so delicious!

Zero Calorie Caesar Dressing:
Olive Oil
Anchovies
Garlic
Parmesan Cheese
Greek Yogurt (Replacing the Egg Yolk)
Directions: Blend all the ingredients in a blender until they are completely smooth. ENJOY!
Ranch Dressing:
Spices: parsley, garlic powder, onion powder, black pepper, salt, and chives
Non fat plain greek yogurt
Buttermilk
Dijon mustard
Lemon juice
Directions: Same as Caesar Dressing, blend and enjoy!
Balsamic Dressing:
Apple cider vinegar
Aged balsamic vinegar
Extra virgin olive oil
Honey (just a bit ess)
Dijon mustard
Dried thyme
Finely chopped red onion or shallots
Minced garlic
Directions: Combine all the ingredients in a jar, then carefully cap it.
shake ferociously The vinaigrette will get thicker and more luscious with the aid of the mustard.
This is a perfect salad dressing recipe and is typically zero calories per serving. This homemade dressings are great for a healthy salad, pasta salad, as a dip for grilled chicken, or even side dish, add red onion then it’s great for wraps and even as a marinade.
For all you weight watchers, you don’t need to sacrifice the food you eat for weight loss. These fat free creamy dressings recipes are a great condiment to your favorite salad.

Wow I am glad you liked Europe so much!! Isnt it weird that we really walk everywhere (if you live in a city at least) .. when I came to live in the US for a year that was so hard for me NOT walking to the grocery store etc.. needless to say I ended up gaining a lot of weight and weight my heaviest back then (that was 5 yrs ago)
I am currently on your detox by the way, I am one of the girls who you sent the intructions to 🙂 thanks .. I am already on day 3! however (and please dont laugh) I didnt eliminate coffee from my diet and still have it with a bit of skim milk and soy -.- bad I know. but I have to do this for my mental clarity (and to prevent withdrawal headache, it gets pretty bad)
