Yummm: Rolled Oats with Homemade “Five Second Jam”

Lauryn Evarts talks diet, fitness, and healthy cooking. Oatmeal is rad…but I feel like it’s sort of the forgotten breakfast food.

Lately I’ve been reallllllll into rolled oats.

Why?

Because.

Here’s the deal: I’ve noticed that if I wake up & eat an oatmeal break I don’t want carbs at night. Oatmeal gives me that satisfied-I-don’t-need-to-stuff-my-face-with-pasta-and-shit-later feeling.

Ya know?

It’s filling, delicious, & welp, it also happens to be one of the world’s healthiest foods.

Say what?

According to WHFoods.org, “oats are harvested in the fall but are available throughout the year and can add extra nutrition to a variety of healthy dishes. Oats, known scientifically as Avena sativa, are a hardy cereal grain able to withstand poor soil conditions in which other crops are unable to thrive. Oats gain part of their distinctive flavor from the roasting process that they undergo after being harvested and cleaned. Although oats are then hulled, this process does not strip away their bran and germ allowing them to retain a concentrated source of their fiber and nutrients. Oats, via their high fiber content, are already known to help remove cholesterol from the digestive system that would otherwise end up in the bloodstream. Now, the latest research suggests they may have another cardio-protective mechanism. Antioxidant compounds unique to oats help prevent free radicals from damaging LDL cholesterol, thus reducing the risk of cardiovascular disease”

Don’t be fooled though…make sure you’re buying rolled oats that are non-GMO, gluten-free, MSG free, wheat/dairy free. Trader Joe’s carries this kind & they’re amaze. Check out my latest obsession:

Ok, so let’s talk about this lil dime of a recipe: I use my favorite berries, a squeeze of lemon, a lil raw honey ( << read more here ), & some cinnamon/pumpkin pie spice to create a jam-like substance. Squish it all together with a fork to make something similar to this mixture.

Then I cook my rolled oats on the stove ( not the microwave, stove. Not a micro-fan, sorry ) in fluoride-free water. Once the oats are cooked a bit ( I like to keep them a little raw instead of cook them ALL the way through ), I add them to my jammy jam. Sprinkle chia seeds on top &…yummmm…OMG…die.

If you’re a milk person, try adding a little unsweetened almond milk

FYI: just because oats are freaking phenomenal, doesn’t mean to shove the whole bag down your throat— practice portion control & you’re in the safe zone.

Last night I had a dinner party at my house with some of my GFs.

Like, we turned up Miley Cyrus’ new album & let loose…!

I mean, we were literally head banging to Miley. Thanks, wine!!

Anyway, I set up a picnic blanket on my patio with lots of candles, wine, & yellow roses. It was like little séance under the stars.

The menu was gluten-free because two of my friends are gluten-intolerant— check it what we ate/drank:

Apps: extra spicy guacamole with Belgium endive lettuce as chips.

Salads ( two is better than one! ): a cucumber, tomato, olive salad similar to this insanely tasty recipe & a kale, almond, & goat cheese salad.

Main course: shredded chicken tacos with lettuce, avocado, jalapeños, Mexican cheese, & Roma tomato on corn tortillas ( << perf because corn is gluten-free ).

Dessert: my skinny lemon berry 100 cal crumble ( which I’ll be feature on ze blog next week! )

Drinks: Pinot noir, Corona Lights, & chilled Rosé. And lots sparkling water!!

& we may or may not have done one shot of tequila too…this wasn’t a typical Monday, peeps. LOLZ.

Obviously I was pretty excited about this affordable find because it screamed Cabo/margs/poolside. It’s super tropical looking & in person, looks like a two thousand dollar bag.

For a cool nine bucks.

I mean, just because something’s expensive doesn’t mean it’s cute/cool!! #notsorry

Magical, Bad Ass Pomegranate Seeds

Pomegranate seeds are freaking magical. I use them in/on everything.

Why?

Glad you asked.

Welp, they’re anti-aging, fight cancer, help control blood pressure, loaded with nutrients/antioxidants, low cal, & a total superfood.

These are some of the ways I use the tiny red antioxidants:

<< On top of fro-yo or coconut (dairy-free) ice cream with a bit of real maple syrup.

<< I use them in a juicer with kale, cucumber, lemon, & ginger.

<< In the mood for a Mexican fiesta? Throw them on top of enchiladas or tacos.

<< Sprinkle them on top of a smoothie.

<< A skinny pomegranate margarita ( or mojito ) is freaking delish.

<< Make a mocktail: sparkling water, lime, & pomegranate seeds.

<< Salsa. Just trust me. Add them to any salsa & get ready to die.

<< Greek yogurt, cinnamon, & pomegranate seeds= heaven.

<< Sprinkle some seeds on your oatmeal…so much better than sugary-ass Crasins.

<< Use 45 calorie flaxseed Oasis toast & mash the seeds with a fork to make ‘jam.’

<< On top of a sweet potato.

<< They pair well with any fish ( ESP tuna!).

<< In champagne. Because duh, bubbly & pomegranate seeds? Die.

<< My absolute favie way to use the seed: add them to literally any salad or quinoa ( << I do this daily ). So yummers.

FYI: I am not a fan of pasteurized pomegranate juice- I would rather just use the real fruit. Also, if eating them instead of drinking the seeds provides tons of fiber. The seeds can be found at any Trader Joe’s location.

Because let’s be honest: removing those lil shits from the white part of the fruit is a real bitch!

The best part: it so easy to just throw the seeds on anything. I mean, seriously. Pomegranate seeds are the bomb.com.

Pink Himalayan salt is an old fart.

Why?

Because it’s over 250 million years old.

Meaning the crystals come from the earth instead of being processed & full of chemicals.

Some of the magical benefits:

1.} It regulates water throughout the body.

2.} Promotes a happy, healthy pH balance in your cells & brain cells.

3.} This specific salt reduces signs of aging. Well, hell. I’m in.

4.} It helps absorb particles through your intestinal tract.

5.} Promotes sinus, respiratory, & vascular health.

6.} Increases the libido. Oh, la, la. Sex kitten time.

7.} Promotes a natural, well-rested sleep. ZZZzzzz.

But I mean, really. It’s essential- you can’t live without it.

So know your freaking salt.

There’s a big fat difference between regular, refined table salt & pink Himalayan salt crystals.

I don’t even keep table salt in my house anymore. Now that I’m used to cooler, healthy salt, I don’t crave the crappy, crap salt.

Overall these crystals are absolutely healthier than the butthole table salts because they don’t contain toxins.
