Here’s a lil back story: I have this seriously bizarre obsession with spaghetti squash. I eat it allllll the time. My friends will call me on a Monday night & they’re all, “what up?” And per usual I’ll reply “just cooking spaghetti squash, e-mailing, & watching Real Housewives.”

Cooking spaghetti squash is my thing. I add a bunch of arugula underneath it ( fills ya up, big time! ), pile on the squash, & add a little Rao’s super spicy arrabbiata sauce with lemon, chili flake, a sprinkle of fresh parm, & some fresh basil..superrrrr satisfying.

Ok, wait, I’m off topic ( WTF’s new though? ).

So the problem?

Whelp, the herbs, der.

Think about it: if I’m cooking spaghetti squash three to four times a week like an OCD weirdo, I want fresh herbs.

Not some canned shit that’s labeled McCormick. I want balls-to-the-walls, real deal basil. In fact, sometimes I’ll even buy a little, cutie basil plant…because why the hell not?

Sadly fresh herbs go bad. & they go bad fast.

This is where the olive oil ice cubes come in.

When cooking my spaghetti squash, I like to heat the Rao’s sauce up with a little olive oil. So by freezing the herbs in the olive oil ice cubes, I preserve my herbs longer & don’t have to worry about them turning a nasty color.

See? They’re still pretty green.

And since I’m always one to add a little flare, I threw in some pomegranate seeds ( antioxidants!!! ). Pome seeds rock my world & I love them on EVERYTHING. Pasta, salad, oatmeal, sparkling water, etc.

Ready For Your World To Be Rocked? EVOO Ice Cubes. Yupppp.I’ve used my ice cubes for salad dressing ( they just need to be warmed ) & on pizza ( POME seeds x a tad EVOO x basil?!!! OMG ). Do whatever your little heart desires with these magic cubes.

Directions: grab some non-GMO, organic EVOO, a handful of fresh pomegranate seeds, & diced basil ( it’s up to you on how much; get crazy ) & throw it all in a silicon ice cube holder…wait a few hours…& you’re golden.

This recipe rocks my world.

I have literally made this quinoa salad five times a week for linner ( linner= lunch + dinner combined ) for the past month.

Back story: one random Monday I had no greens in the fridge…but was desperately craving a salad.

I decided to make my usual daily snack: I threw avocado into a bowl & added Himalayan pink crystal salt + Meyer lemon juice.

Suddenly I had the bright idea to add vegan quinoa, some leftover pomegranate seeds, & a spoonful of hummus.

All was amaze…but it needed spice.

Cue the chili flakes.

It was so yummmm, guys. Like, so, so party-in-my-mouth-yum. I’ve been OMG-ing ever since the first bite.

And honestly, this salad is super F-ing ugly to look at, but I don’t care- it’s addictive.

Warning: once you try this, prepare to fall in love…it’s that good.

Here’s some food for thought:

A friend of a friend visited Shanghai recently. She came back from the trip feeling crazy-inspired.

Why?

Because in the city she visited had many outside parks with gym equiment ( think stretching machines, Ellipticals, Treadmills, ladder climbers, etc. ). There were people in circle dancing and practicing Tai chi & yoga-like moves. There was music and laughter, and tons of movement.

People were also walking around the park massaging ( aka hitting themselves lightly ) their lymph nodes as a warm up.

Side note: waking up the lymph system gets rid of excess fluid, bacteria, viruses, and cell waste. They act as check points along the passways of the vessels. And when they’re working well, we feel strong, healthy, and energized ( << a post to come on this ).

Here’s the weird thing though: some people were even smoking cigarettes while they were “working out.”

This is SO interesting to me because in America we think of working out/exercising as a chore. A task to cross off our to-do list. Our hour to sweat it out. We plan our yoga class or our barre workout.

But why not making body movement a way of life? Just something you do whenever/wherever. I mean, these people don’t seem to think of movement as “working out.” They think of it as a daily activity— they just do.

Hence why some of the people were smoking cigs.

To them, smoking cigarettes while exercising is just like walking and smoking or sitting and smoking.

It’s no different. Because exercise is just a part of their whole day, including their smoke breaks.

So! I guess the point is working out doesn’t have to be such a chore.

Incorporate all kinds of movement throughout your day- make it more of a lifestyle and less of a daunting task that’s annoying. Live Shanghai-style ( sans the cigs ).

Oh, and naturally today I was walking around lightly hitting myself to engage my lymph system.

Weird? Yah. I D K.

A good friend of mine was released from the hospital today after hip surgery. I made this healthy version of “ice cream” for her because who doesn’t love frozen sweets…ESP after the sicko hospital?!

Lately I’ve become obsessed with two-three ingredient recipes.

Whyyyyy? Obvious reasons.

They’re quick + easy. But even more so, there’s not a million ingredients. Smaller recipes contain less cals/sugar/carbs. No one wants to eat something filled with ingredients that they can’t pronounce. Right ; )?

My typical rule of thumb: I try to steer clear of grocery store items that have more than five ingreds. If you don’t know what they are then either look into it ( << you know, Google.com…don’t turn a blind eye to what you’re eating! Be informed! ) or MOVEEEE on down the aisle.

Anyway to make this combine pineapple slices, mint leaves, & pomegranate seeds in a food processor. Freeze for an hour. Add mint + pomegranate seeds for garnish.

Ta da.

Totally a cure for anyone’s sweet tooth ; ).

Vodka Pomegranate Mojito’s

Mint leaves & pomegranate seeds provide the freshest taste

Lately, I have taken a huge interest in herbs. Mint has so many benefits [ it has tons of minerals, rich in Vitamin A, C & B2 & is an antioxidant ], so I decided to create a skinny cocktail using this specific herb. As opposed to a regular mojito [ which normally contains rum ], I used vodka [ less calories! ]. A fun addition was the fresh pomegranate seeds & lime. This is super easy, has about 100 calories & is low on sugar. We enjoyed these skinny cocktails, while playing scrabble with Boardwalk Empire [ the guy with half a face steals the show ] in the background.
