Yummm: Rolled Oats with Homemade “Five Second Jam”

Lauryn Evarts talks diet, fitness, and healthy cooking. Oatmeal is rad…but I feel like it’s sort of the forgotten breakfast food.

Lately I’ve been reallllllll into rolled oats.

Why?

Because.

Here’s the deal: I’ve noticed that if I wake up & eat an oatmeal break I don’t want carbs at night. Oatmeal gives me that satisfied-I-don’t-need-to-stuff-my-face-with-pasta-and-shit-later feeling.

Ya know?

It’s filling, delicious, & welp, it also happens to be one of the world’s healthiest foods.

Say what?

According to WHFoods.org, “oats are harvested in the fall but are available throughout the year and can add extra nutrition to a variety of healthy dishes. Oats, known scientifically as Avena sativa, are a hardy cereal grain able to withstand poor soil conditions in which other crops are unable to thrive. Oats gain part of their distinctive flavor from the roasting process that they undergo after being harvested and cleaned. Although oats are then hulled, this process does not strip away their bran and germ allowing them to retain a concentrated source of their fiber and nutrients. Oats, via their high fiber content, are already known to help remove cholesterol from the digestive system that would otherwise end up in the bloodstream. Now, the latest research suggests they may have another cardio-protective mechanism. Antioxidant compounds unique to oats help prevent free radicals from damaging LDL cholesterol, thus reducing the risk of cardiovascular disease”

Don’t be fooled though…make sure you’re buying rolled oats that are non-GMO, gluten-free, MSG free, wheat/dairy free. Trader Joe’s carries this kind & they’re amaze. Check out my latest obsession:

Ok, so let’s talk about this lil dime of a recipe: I use my favorite berries, a squeeze of lemon, a lil raw honey ( << read more here ), & some cinnamon/pumpkin pie spice to create a jam-like substance. Squish it all together with a fork to make something similar to this mixture.

Then I cook my rolled oats on the stove ( not the microwave, stove. Not a micro-fan, sorry ) in fluoride-free water. Once the oats are cooked a bit ( I like to keep them a little raw instead of cook them ALL the way through ), I add them to my jammy jam. Sprinkle chia seeds on top &…yummmm…OMG…die.

If you’re a milk person, try adding a little unsweetened almond milk

FYI: just because oats are freaking phenomenal, doesn’t mean to shove the whole bag down your throat— practice portion control & you’re in the safe zone.

My New Year’s resolution?

I meannnnn, instead of dreaming up a bunch of shit I hope for, I’d rather just be productive.

So I guess my resolution is to flourish.

Flourish in love, business, fitness, family, friends, health, Pixy, & life in general.

How to Recover from a Few Days of Eating like Shit

Since I stepped off the plane from SF, I’ve felt bloated, tired, & slightly hungover…until today. You know that post-Thanksgiving scene when you feel like a fat pig? Welp, that needed to disappear- stat. I wanted to show you all how to get back on track after a few days of eating crap & drinking too much booze:

++ How to Recover from a Few Days of Eating like Shit:

+ Sweat it out: that’s right. Don’t make excuses- it’s more effective to force yourself out of bed & sweat it all out, as opposed to lounging around. Today I did a Pilates class & then met my workout group at the beach for some strength training [ see above: Sara, Elena, & Bri ]. I cannot express how much better I felt. My endorphins kicked in- & boom!!! Instant recovery.

+ Example of a recovery meal plan:

- Breakfast: steel cut oatmeal + blueberries + cinnamon + Truvia + rice/almond milk.

- Snack: watermelon or grapefruit slices [ these are both 92 & 91 % water ].

- Lunch: an open-faced sandwich [ that means one slice ; ))) & I prefer 7 carb Oasis bread ] with spicy mustard, sliced tomatoes, chili flakes, lettuce, & organic turkey [ toasted ].

- Snack: one apple, sliced with two scoops of a nut butter.

- Dinner: load me up with veggies! Tonight will be an arugula salad with watermelon chunks, avocado, beets, broccoli, celery, orange bell pepper & cucumber slices with a sliced egg on top [ dressing a bit of red wine vinegar, EVOO, fresh lemon, garlic, & Italian seasoning ].

Dessert: fresh berries with squeezed lemon on top or a small piece of dark chocolate.

+ Water [ + some coffee & tea ]: drink as much water as possible. Coffee [ with a splash of soy + cinnamon + nutmeg ] gives me a nice jolt. More than one cup & I turn into a full-blown maniac- lol. Green tea is full of antioxidants AND speeds the metabolism!

+ Cut alcohol for a few day: buh-bye wine! Detox a bit. It’s fabulous for your skin, hair, & liver. Give yourself a break.

 Sooooo…stop the self-criticism BS & do something productive about it!

Wholesome Oatmeal Coconut Dark Chocolate Chip Cookies

I find baking extremely therapeutic. Its measurements are exact & girly and allows my creativity to flow. I am always trying to substitute ingredients to make my baking bites a bit healthier. This specific recipe was all organic and turned out to be a learning experiment too: steel cut oats are difficult to bake with [ they end up taking way too long to bake ], I would use rolled oats next time [ they're quicker ].

I whipped up this batch on a whim, and it was a success [ other than those pesky steel cut oats ]. Each cookie, if you portion the cookies out mindfully, turns out to be about 80 calories [ that does not mean to eat the whole batch in one sitting!!! ]. My slightly chubby Chihuahua was the ultimate taste tester and approved with a tail wag and long, low cry that begged for another lick.
